4 servings

Base:
4 cups of toasted buckwheat groats or rolled oats

Blueberry peach:
1 cup dried peaches
1 cup dried blueberries
1/3 cup raw agave nectar or honey
1 teaspoon Kosher or sea salt
1 cup apple juice
1/3 cup unsweetened shredded coconut

Pistachio crunch:
1 cup dried apples
1/3 cup raw honey or raw agave
1 tablespoon coconut oil
1 teaspoon Kosher or sea salt
2 tablespoons cinnamon
1 teaspoon nutmeg
½ cup raw pistachios

Superfood snack mix:
1 cup gogi berries
1/3 cup raw agave or honey
2 tablespoons coconut oil
1 teaspoon pure vanilla extract
1 teaspoon Kosher or sea salt
1 cup hemp seeds

1. Preheat the oven to 350º.
2. Soak any dried fruit in the recipe in fresh water that covers the top of the fruit so it can absorb the moisture for about 5 minutes. Strain off the rinse water, and then dice the dried fruit and set aside.
3. In a large mixing bowl, combine any sweetener, oil, salt, and spices. Whisk well. At this point, add any liquid ingredients (juice or extract) and whisk again.
4. Add buckwheat or oats, nuts, or seeds to the liquid, and toss together until all parts of the granola are coated. Fold in fruits.
5. Place the granola mixture in a medium baking dish at least 3 inches deep. Bake the granola for 25 minutes, stirring occasionally.  Bake 5 minutes more at a time if the mixture is not crunchy. All excess moisture should be gone before removing the granola from the oven.
6. Remove from the oven and let cool. Store in an airtight container. If completely dry, the mixture should save in the pantry for at least 3 weeks.
