This week, the chefs created a Daniel Plan Approved Mediterranean Menu, including:
- Baked Eggplant Lasagna (gluten-free) Layers of polenta-crusted eggplant baked with fresh tomato and basil.
- Grilled Zucchini and Yellow squash with extra virgin olive oil, garlic and sea salt. Drizzled with a light balsamic reduction.
- Baked Scampi brown Rice Risotto flavored with white shrimp, garlic, lemon zest and flat leaf parsley.
- Fresh Farmers Market Vegetable Platter with house made hummus.
- Hearts of Romaine Caesar with vegan Caesar citrus dressing.
- Fresh Seasonal Fruit Salad accented with fresh mint and agave nectar.
- An assortment of flavored water and refreshing beverages.
