If you enjoy chicken but have never learned to roast a whole one, try this technique for a gloriously golden, crisp bird. Leftovers make great chicken salad or sandwiches the next day, or use the meat for tacos or quesadillas. Save the carcass to make chicken stock. If you do not have Penzey’s special citrus blend called Florida Seasoned Pepper, use a combination of freshly ground black pepper, granulated garlic and kosher or sea salt.
