Is there really anything better than pumpkin this time of year? I mean, not only is it a powerhouse of antioxidants, it’s a great source of fiber, low in calories, rich in minerals and great for your skin and eyes. This recipe celebrates the benefits of it staying raw, which preserves more of the vitamins and minerals. Coupled with a dense, nutty cocoa-rich crust full of good-for-you EFA’s with the nuts and coconut and antioxidants from the cocoa and a dark chocolate drizzle, you really can’t get much better. That’s lovin’ without the oven’!
